1 16-oz. pkg. black beans
1/2 gallon water
1 ham bone (or 1/4 lb. white bacon)
1 lg. onion, chopped
3 bell peppers, chopped
2 cloves garlic, minced
2 T. olive oil
3 bay leaves
1 T. salt
1/8 tsp. oregano
1/8 tsp. hot sauce
1/2 c. red wine
1/2 c. vinegar
sour cream (optional)
lemon juice (optional)

Directions:
Directions:
Clean and wash beans. Soak in water overnight, save water. Place beans and ham bone in a large pot with water that was used for soaking. Bring to a boil, then lower heat to medium. Cook for 30 minutes. Saute onion, peppers and garlic in oil until tender, then combine with beans. Add bay leaves, salt, oregano, hot sauce and wine. Cook on low one to two hours. Beans should be tender and liquid should be thick and inky-black. Add vinegar to pot a few minutes before serving. Serve with a dollop of sour cream and a few drops of lemon juice on top if serving as a soup. Can also be served over rice. Good with Cuban bread.
