1/2 lb. whole button mushrooms
1 1/2 cups baby carrots
1 med. onion, cut into 1/2 in thick wedges
1 lg. yellow,red, or green bell pepper, cut into 8 strips.
1/3 cup light zesty Italian dressing
1/3 cup grated Parmesan cheese, divided

Directions:

Preheat oven to 450º Line 15x10x1 in baking pan with foil; spray with cooking spray. Set Aside.
Toss vegetables with dressing & 1/4 cup of the cheese; spread into prepared pan.

Bake 28 to 30 min. or until vegetables are tender, stirring after 15 min. Sprinkle with remaining cheese.
