1/2 c. (1 stick) unsalted butter (room temperature)
1 c. sugar
2 eggs
2 c. flour
1 1/2 tsp. baking powder
1/2 c. milk
1 tsp. vanilla extract
1 pint blueberries
nutmeg

Directions:
Directions:
Preheat oven to 375º. Line muffin pan will muffin cups and lightly spray each with nonstick spray. Beat on medium speed butter, sugar, and one egg until fluffy. Add second egg, and beat until very smooth and fluffy. In a separate bowl, whisk together flour, baking powder, and salt. In a separate bowl, stir together milk and vanilla. Turn mixer on, and alternate adding dry mix and milk mix. Mix well, but do not overbeat. Add a little flour to coat blueberries to prevent them from sinking. Add them to the batter, and stir gently. Spoon batter into muffin cups, and sprinkle with nutmeg. Bake 15 minutes, rotate, and bake 15 minutes more.
