1 1/2 lb. zucchini cut into 1/4 in slices
1 lb. ground beef
1 med. onion, chopped
1 cup instant rice, uncooked
1 tsp. garlic salt
1 tsp. oregano
2 cups cottage cheese
1 cup cream of mushroom soup (undiluted)
1 cup shredded cheddar cheese

Directions:
Directions:
Cook zucchini in boiling salted water until crisp-tender, Drain.

Brown beef with onions, drain. Add rice and seasonings. Place 1/2 zucchini in a 9x13 pan. Cover with beef mixture; spoon cottage cheese over beef. Spread other half of zucchini; spoon cream of mushroom soup evenly on top. Sprinkle with cheese. Bake at 350º for 35 to 40 minutes.
