Cucumber Jelly Recipe

8 cucumbers - any type
1 onion (medium)
7 cups of white sugar
1 cup white vinegar
1 pkg liquid Certo (2 pouches)
Celery seed (1 tsp.)
onion powder (if desired) (1 tsp)
Green food coloring (optional)

Directions:
Directions:
Peel and puree cucumbers and onion using a blender or processor (I just put mine through the onion chopper and left in the seeds) but if you puree, run through a strainer and remove seeds.
Measure 2 1/2 cups of puree and put in a pot: Add the sugar and vinegar, stir well.

Bring mixture to a boil and boil hard for 2 minutes (watch this as it may tend to boil over.) Add the Certo packages squeeze out from the bottom well) boil again until the mixture "sheets" from the spoon.

Add coloring (if desired)

Pour into jars or freezer containers. (should set like jam or jelly)
Great on toast or as a glaze on meats, etc.

Since I didn't puree or strain mine, when I begin to ladle into jars - the cucumber and onion pieces came to the top and so I put most of that into one container, I plan to use it as a garnish on dishes). Then most of the rest of the jelly was clear except for a few pieces here and there. This is fine. Of course if you puree then this note is null and void. :>
