2 C cooked chicken pieces (rotisserie works nicely)
1 onion, diced
1 large can red enchilada sauce
1 C cream or 1/2 and 1/2 (low fat)
1 1/2 C milk
3 1/2 C chicken broth
1/4 -1/2 C butter
1/2 C flour
1 C grated cheddar cheese

Condiments:
sour cream
Monterrey jack cheese
Cotija (Mexican) cheese, crumbled
Green onions, chopped
tomatoes, diced
fresh cilantro
avocados, diced
black beans, cooked
tortilla strips

Directions:
Directions:
Cook onion in a little butter until translucent. Remove and set aside. Melt butter and stir in flour, making a roux. Slowly add liquid ingredients, stirring to keep smooth, not lumpy. Cook until thickens and begins to simmer. Don't boil. Add chicken, cheese, and cooked onion.

Have bowls of condiments on table. Dish soup up into individual bowls and let people add condiments of their choice.
