1 C shortening
2 1/2 C sugar
4 eggs
1 quart buttermilk
2 C Nabisco All-Bran cereal
4 C Kellogg's All-Bran cereal
2 C boiling water
5 C flour
5 tsp baking soda
1 tsp salt

Directions:
Directions:
Sift together: flour, salt and soda. Cream shortening and sugar. Add eggs and buttermilk (which are mixed together). Pour boiling water over bran cereal. Add bran mixture and sifted dry ingredients to first mixture. Dates, raisins, other dried fruit, nuts and/or chocolate chips may be added. Bake in greased muffin tin at 400º for 15- 20 minutes. This can be kept in the refrigerator for up to 2 months or frozen.

These muffins were a staple in the Nelson home. Sharla made them often with chocolate chips, of course! I have made them healthier by substituting canola oil, yogurt or applesauce for the shortening. I've also used mostly whole wheat flour or added a jar of wheat germ. Most recently, I've added ground flax seed and a little brown sugar to muffin tops before baking.
