1 Box Puff Pastry;
2 Tbsp Unsalted Butter;
1 C Frozen Hash Brown Potatoes;
1/2 C Tomato diced;
1/4 C Chopped Onion;
2 Tbsp Green Chiles;
1 C Smoked Ham diced;
11 Large Eggs;
4 oz Cream Cheese;
2 Tbsp Orange Juice;

1 Egg;
1 Tbsp water;

2 Tbsp Parmesan Cheese, shredded

Melt butter in a large non-stick skillet. Add potatoes and saute for 5 minutes. Stir in onions, tomatoes and chilies. Saute 3 minutes. Add ham. Whisk 11 eggs and add them to the pan. Scramble until set. Remove from heat. Add salt and pepper to taste. Stir in cream cheese and orange juice until well-blended. Refrigerate this mixture while working with the pastry.(Can be prepared to this point if making ahead.) Prepare pastry on lightly flour-dusted surface. Roll thawed pastry lenghtwise to 12 x 10 size, then transfer to a piece of parchment paper cut to fit a cookie sheet.Cut top corners of pastry at a 45º angle, continue cutting 1" strips down each side of pastry, leaving center 1/3rd of pastry solid. Repeat process with 2nd sheet of pastry. Recipe yields 2 strudels.Place pastry on parchment sheet, side by side..Divide egg filing between both prepared pastry sheets. Braid 1" pastry strips over egg filling.Whisk water with 1 egg and brush egg-wash over top of strudels. Sprinkle with parmesan cheese. Bake at 400º 20-30 minutes, until golden. Cool 5 minutes before slicing
