6 to 8 stalks celery
3/4 pound fresh mushrooms
2 Tbsp butter or margarine
1 red pepper, seeded and sliced
1/3 cup half and half
1/2 cup grated cheddar cheese
1 can cream of mushroom soup
dash paprika
dash pepper

Directions:
Directions:
Rinse and trim celery. Slice diagonally. Clean mushrooms and slice. In a skillet, saute celery in 1/2 the butter until light green and almost transparent. Set aside. Saute the mushrooms over medium heat in remaining butter until lightly browned and most moisture has evaporated. In a lightly greased casserole dish, layer celery and mushrooms. Heat the soup in a saucepan with the half and half. Pour soup over vegetables. Sprinkle with cheddar cheese, paprika, and pepper. top with half of the red pepper. Bake at 350º for about 20 minutes or until bubbling hot. Garnish with remaining red pepper. Serve.
