8 oz. manicotti noodles
2 T. butter
1/2 small onion, finely chopped
1 clove garlic, crushed
10 oz. froz. chopped spinach, thaw & squeeze dry
1 lb. ground beef round or bison
1/2 c. bread crumbs
1/4 c. grated Parmesan cheese
2 eggs, lightly beaten
1/2 tsp. dried basil
1 tsp. salt
Dash of black pepper
3 cups marinara sauce
Grated Parmesan Cheese

Directions:
Directions:
Cook noodles; lift with slotted spoon; place in bowl of cold water until ready to stuff.
Saute onion and garlic in butter. Add spinach, heat until moisture is absorbed. Transfer to large bowl.
Brown meat until crumbly and add to spinach mixture with bread crumbs, 1/4 c. Parmesan cheese, eggs, basil, salt & pepper. Stir & mix together well.
Drain noodles one at a time. Fill each with meat mixture.
Pour a little marinara sauce into shallow baking pan. Lay manicotti side-by-side in sauce. Top with remaining sauce. Sprinkle with Parmesan.
Bake uncovered @ 350º for 20 min. or until bubbling hot. Brown top under broiler.
