5 eggs
1 cup oil
1 tablespoon fresh lemon juice
2 teaspoons vanilla
3 cups flour
1 1/2 cups sugar
2 tablespoons cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 1/2 cups zucchini ; grated
1/2 cup chopped walnuts
1/4 cup raisins
EGG WASH
1 egg
1/4 cup milk

Directions:

Grease 2- 8 1/2" loaf pans Bake 350 60 minutes

Mix eggs, oil, lemon juice and vanilla until yellow and foamy

In separate bowl sift together flour, sugar, cinnamon, baking powder, soda and salt. Mix in zucchini, nuts and raisins. Gradual add to egg mixture.Divide evenly between pans. Bake till starts to pull from side of pan. 60 minutes Mix egg and milk brush over tops, Return to oven bake additional 5 minutes.
