1-3 pounds salmon fillet
8 teaspoons kosher salt
1 tablespoon sugar
1 tablespoon liquid smoke flavoring ; light Tbsp

Directions:

Mix together the salt, sugar and smokeRub all over the filletSeal tightly in a plastic bag. Place in refrigeratorTurn it over daily for 4 days Then rinse, lightly put vegetable oil all over the fillet. Thinly slice. Freezes very well. Serve with capers, dill, caviar etc as an appetizer on pumpernickel bread squares Great on bagels with cream cheese
