1 tablespoon sugar
1 tablespoon liquid smoke flavoring ; light Tbsp

Mix together the salt, sugar and smokeRub all over the filletSeal tightly in a plastic bagPlace in refrigeratorTurn it over daily for 6 daysThen rinse, lightly put vegetable or olive oil all over the filletThinly slice. Freezes very wellServe with capers, dill, caviar etc
