1/2 cup of margarine, melted
1/3 cup Dijon Mustard
2 tablespoons dry sherry, optional
1/8 teaspoon ground ginger
2 whole boneless chicken breasts, split (about 1 pound)
1/3 cup dry bread crumbs

Directions:
Directions:
1. In a small bowl, mix margarine, mustard, ginger, sherry.
2. Dip chicken in margarine mixture, then in bread crumbs to coat.
3. Place on ungreased baking sheet.
4. Bake at 375º for 35 to 40 minutes or until golden brown.
5. In a small saucepan, over medium heat, bring remaining margarine mixture to a boil.
6. Simmer 2 to 3 minutes.
7. Serve as a sauce over chicken.
