2 cups chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/3 cup grated Parmesan cheese
1 cup milk (1 1/4 cups for large pie plate)
3/4 cup Bisquick
3 eggs
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
Preheat oven to 400º. Lightly grease 10-inch pie plate. Sprinkle zucchini, tomato, onion, and Parmesan cheese in pie plate. Beat remaining ingredients, until smooth (1 minute with hand mixer). Pour into pie plate. Bake 30 minutes, or until golden brown & knife inserted in center comes out clean.
