2 cups sifted flour
1 tsp. baking soda
3/4 cup sugar
1 egg
1/3 cup orange juice
1 tsp. grated orange rind
3 tbsp. white vinegar in measuring cup and fill to 2/3 full with water
1/4 cup melted shortening
1 cup halved or chopped cranberries
1 cup chopped walnuts

Directions:
Start heating oven to 350º. Grease 9 X 3 inch loaf pan. In bowl, sift flour, soda, salt, and sugar. With fork , beat egg; stir in orange juice and rind, vinegar-water, and shortening. Add, all once to flour mixture; stir just until flour is moistened. Add cranberries and walnuts; turn into pan. Bake 60-70 minutes. Cool in pan 10 minutes. Remove and cool several hours before slicing. Freezes well.
