7 lbs. of rind
7 c. sugar
1/2 tsp. oil of cloves
1 pt. vinegar
1/2 tsp oil of cinnamon
(The oil of the spices does not darken the pickle as ground or whole spices would.)

Directions:
Prepare melon rind and cut as desired. Soak in slightly salted water overnight and then parboil until it can be pierced with a fork. Do not overcook.

Drain the parboiled rind, boil syrup and pour over the rind. Let stand until morning and drain off syrup and reheat. Pour over rind again. Repeat again next morning. The third morning heat rind and syrup and seal in jars. If desired, use red or green vegetable coloring, adding this the third morning. This is a rich, sweet pickle, especially fine looking when colored.
