4 pounds chicken, cut up or chicken pieces
1 to 1/2 head garlic ; pureed depending on amt u like
1/4 cup oregano
1/2 cup wine vinegar
1/4 cup olive oil
1 1/2 cup pitted prunes or apricots I used both
1/2 cup pitted spanish green olives
1/2 cup capers with some of juice
6 bay leaves
1/4 cup parsley
1 cup brown sugar
1 cup white wine

In large bowl combine chicken, garlic, oregano, S & P, olive oil, prunes or apricots, vinegar, olives, capers and juice, parsley and bay leaves. Cover refrigerate at least 24 hours or 2 days. Arrange chicken in pan Spoon marinade over Sprinkle chicken with brown sugar and pour white wine around chicken Bake 50 minutes 375 oven Baste frequently

Very good when made day before and reheated if I do this I make sure not to overcook chicken. May also be served at room tempeture
