2 cans black beans, rinsed
16 oz frozen white corn
1 green bell pepper, chopped
1/2 large red onion, chopped
1-2 avocados, chopped
3-4 roma tomatoes, chopped
1 bunch cilantro, chopped
1/4 c extra virgin olive oil
1/4 c fresh lime juice
1-2 t garlic, minced

Directions:
Directions:
Combine black beans, corn, bell pepper, onion, tomatoes, and cilantro. Mix together. Add avocado and mix thoroughly. Combine olive oil, lime juice and garlic. Whisk together. Pour dressing gradually into the veggie mixture and mix.

NOTE: corn may be mixed while frozen

My daughter says this recipe is "awesome" and can be eaten by itself (as a dip) or in a fajita. NOW THAT'S my kind of recipe!
