Cake ingredients:
3 cups all-purpose flour
2 cups sugar
1 tsp.. baking soda
1 tsp. salt
1 tsp. ground cinnamon
3 eggs (beaten)
1 1/2 cups Crisco Oil
1 1/2 tsp. vanilla extract
2 cups chopped bananas (about 4)
2 cups chopped pecan
1 - 8 oz. can crushed pineapple

Lemon frosting ingredients
1 box confectioners sugar
1 stick margarine or butter
1/8 tbsp. evaporated milk
2 tbsp. lemon juice
couple drops of yellow food coloring

Cream Cheese Frosting ingredients
2 pkgs (8 oz. each) cream cheese (softened)
1 cup (2 sticks) butter or margarine
2 boxes (16 oz.each) confectioners sugar
2 tsp. vanilla extract
Dash of salt

Sift flour once and measure. Then sift all dry ingredients together. Add all other ingredients. Mix well with a fork (do not beat). Bake at 325º for about 1 hour and 15 minutes in tube pan. Use your choice of frostings.

Lemon frosting:
Beat all ingredients together until fluffy. Frost cooled cake.

Cream Cheese frosting:
In a large bowl, with electric mixer, beat cream cheese and butter or margarine until smooth. Add confectioner sugar and beat until fluffy. Stir in vanilla extract and salt.

Note: Instead of a tube pan, you may use 3 greased and floured 9-inch cake pans.
Generously spread frosting between cooled layers and on sides and top of cake. Note: make sure each layered pan is cooled for 10 minutes before spreading frosting.
