5 lbs white potatoes
1 sweet onion; finely chopped
9 eggs; hard-boiled

Dressing:
3 c. mayonnaise (not salad dressing)
2 tsp. mustard
3/4 c. milk
3 T. vinegar
1/3 c. sugar
1/4 c. sweet relish
1/4 tsp. garlic powder
1/4 tsp. onion powder
Salt to taste

Peel potatoes and cut into 1 inch cubes. Cover with water and boil until fork tender, but still firm. Drain and cool.

Chop eggs. Reserve one whole egg, sliced, for garnish.

Combine mayo, mustard, milk, vinegar, sugar, sweet relish, garlic powder, onion powder, and salt in mixing bowl and whip until smooth and creamy.

Pour potatoes, eggs, and onions into large bowl or pan. Pour dressing mixture over the top and mix until potatoes are well moistened. If needed, moisten with more mayonnaise. Place in large mixing bowl and smooth the top with the back of a spoon. Arrange egg slices evenly over top and sprinkle with paprika.

Refrigerate until chilled.
