4-6 Ears Fresh Corn
Olive Oil
Juice of 2 Limes
3/4 Cup Mayo
1/2 Tbs Cayenne Pepper (or less... to taste)
2-3 cloves Garlic (minced)
Salt and Pepper
1/2 to 1 Cup crumbled Cotija Cheese (also called Queso Fresco- can be found in the Mexican/ethic food section of most groceries)

Clean and husk the corn, drizzle with olive oil, salt and pepper and individually wrap in aluminum foil with the shiny slide touching the corn. Grill over high heat for about 20 minutes peeking inside the foil until you get some char marks on the corn and it is fully cooked. In the meantime, combine the lime juice, mayo, cayenne, and garlic to make a dressing (should be the consistency of a thin ranch dressing). Season with salt and pepper. Adjust cayenne to your tastes but the dressing should be very limey. Brush the corn with the lime dressing and sprinkle or roll the corn in the crumbled cheese. Done!
