3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice

Mix dry ingredients:
3/4 cup flour
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt

Filling:
1 cup powdered sugar
4 tablespoons soft butter
6 ounces cream cheese
1/2 teaspoonvanilla

Directions:
Directions:
Beat eggs 5 minutes. Gradually beat in sugar. Stir in juice and pumpkin. Mix dry ingredients and fold into batter.

Line jelly roll pan with foil.

Pour cake batter in pan. Bake at 375º - 15 minutes
Lay out towel and sprinkle with powdered sugar.
When baked invert cake onto towel. Carefully remove foil and roll cake and towel together starting at narrow end. Cool on rack.
Unroll when cool. Fill and roll up again without towel. Wrap in foil or plastic wrap. Chill. May freeze.
