12 oz pkg Farmer John regular sausage
12 oz pkg Farmer John hot sausage
32 oz pkg frozen O'Brien potatoes
2 c shredded cheddar cheese
18 eggs
1 c heavy cream
7 oz can diced ortega chilies
1/4 c chopped chives
2 c shredded jack cheese

Directions:
Fry sausage in skillet; crumble and remove to plate. In sausage grease fry O'Brien potatoes until crispy. In separate bowl mix together eggs, cream, and ortegas. Spray 13 x 9 x 2 inch pan with cooking spray. Layer fried potatoes on bottom, then cheddar cheese and the sausage. Pour egg mixture over sausage. Sprinkle with chives and top with Jack cheese. Gently press jack cheese into egg mixture. At this point you can refrigerate overnight and remove 1/2 hour before baking. Bake at 325º for approximately 45 minutes to one hour, or until eggs are cooked through and cheese is melted. Remove from oven and let sit for 5 minutes before cutting.
