1/2 cup mayonnaise
3 Tbs. grated romano cheese
1 tsp. lemon juice
1/4 tsp ground black pepper
1 eggplant, cut into 1/2 inch slices
2 tomatoes, cut into 1/2 inch slices
4 Tbs. olive oil
slices of focaccia or ciabatta bread
feta cheese
fresh basil leaves

Brush epplant and tomato slices with olive oil, salt and pepper; grill eggplant 8 minutes, tomatoes 4 minutes; mix mayo, cheese, black pepper and lemon juice; spread on grilled bread slices , layer vegetables, top with crumbled feta cheese and fresh basil leaves.

This was delicious! Next time, I'll probably grill portabello mushrooms (and maybe red bell peppers) to add to sandwich. Very filling.
