Carrot Cake:
2 c. sugar
1 1/2 c. oil
4 eggs
3 C grated carrots
1 tsp. salt
1 tsp. baking soda
2 c. flour
2 tsp. cinnamon
1 c. chopped walnuts
1 c. raisins

Cream Cheese Frosting:
1/2 c. butter, softened
16 oz. cream cheese, softened
1 tsp. vanilla
1 lb. powdered sugar

Directions:
Directions:
Mix all cake ingredients in mixing bowl with paddle attachment. Pour into greased and floured 13 x 9 x 2 inch cake pan. Bake at 325 for 1 hour. Cool.

Top with cream cheese frosting; Cream butter and cream cheese together with whisk attachment. Add vanilla, and powdered sugar; beat until light and fluffy.
