1 clove garlic, minced
2 C country-style bread (3 oz) cut into 1-inch cubes
3 lbs. ripe tomatoes (9 medium), each cut into quarters
1/4 C loosely packed fresh basil leaves, chopped, plus additional leaves for garnish
1 tsp. sugar

In a small skillet, heat oil on medium until hot. Add garlic and cook 1 minutes, stirring. Remove skillet from heat.

In food processor with knife blade attached, pulse bread until coarsely chopped. Add tomatoes and garlic; pulse until soup is almost pureed.

Pour soup into bowl; stir in chopped basil, sugar and 1/2 tsp. salt. Cover and refrigerate until well chilled, at least 2 hours or overnight. Garnish each bowl of soup with basil leaves.
