Blend in a food processor
1 large egg yolk 2 T fresh lemon juice
1 tsp salt 1/2 cumin

Add and blend 15 seconds
1 C fresh parsley 1/2 C walnuts
1 C spinach leaves, rinsed and dried

With motor running add
1/4 C olive oil (in a stream) 3/4 C plain yogurt

Prepare Chicken Breasts
3/4 - 1 pound boned and skinned breasts

1. With a sharp knife slice each breast horizontally into two flat pieces. Flatten each piece slightly between sheets of waxed paper. Poach chicken in barely simmering chicken broth for 5 minutes or until just firm.
2. Transfer to glass or ceramic dish, cover with sauce, turn to coat.
3. Chill for at least 2 hours or overnight. Garnish with parsley and a slice of lemon
