2 c self rising White Lily flour (sifted)
1 egg size dollop of butter flavored Crisco
1 c milk

Directions:
Directions:
In a large bowl mix flour and Crisco until well blended. Make a well in the middle of the bowl and pour about 1/4 of milk mixing as you pour. Continue pouring milk into the middle of mixture and mix until dough forms. Whip dough over and over with a fork until dough is light and airy. Sift a small amount of flour onto wax paper. Spoon a small amount of dough out of bowl and roll gently into flour. Pat each biscuit until smooth and round. Place onto a lightly greased baking sheet about 1 inch apart. Cook in a preheated 450º oven until golden brown.

My mother taught me to make these biscuits. Her biscuits are still better than mine but I'm getting there! We can tell even before they're cooked if they're going to be good. The dough is light and feels like baby's bottom. And about the name...originally I called them Pitty Pat's after my Moma. On a recent visit, she told me I should call them Pat Pat's Biscuits because when I was learning to talk that's what I called her. How could I resist?
