2 tsp. olive oil
1 1/2 lbs.de-skinned chicken parts, thighs, breasts,...
2 cups mushrooms
2 medium tomatoes, peeled, seeded and chopped or 24 oz. diced tomatoes
2 cups sliced bell peppers, green or red
1 cup sliced onion
1 tsp. minced fresh garlic
1 tsp. dried oregano
dash salt and pepper
1 tbsp. plus 1 tsp. white wine
4 sliced, black olives1 tbsp. chopped fresh parsley
*We serve it over rice made with broth.

Heat oil in a skillet, add chicken and saute till slightly brown. Remove chicken and set it aside on a platter. In the same pan, saute the veggies and garlic till tender. Add oregano, salt and pepper.

Arrange the chicken and veggies in a casserole dish, add the wine and bake 375º for 25 minutes. We serve this on rice made with chicken or vegetable broth.
