10 c zucchini, chopped
4 c onion, chopped
1-2 red peppers, chopped
1 can (4 oz.) diced green chilies
3 tbsp canning salt
3 1/2 c sugar
3 c vinegar
1 tbsp turmeric
4 tsp celery seed
1 tsp pepper
1/2 tsp nutmeg
5 (1 pint) canning jars and lids, sterilize

Directions:
Directions:
Combine zucchini, onion, pepper, chilies and salt in a large container. Stir well and chill overnight. Rinse thoroughly; drain. Combine sugar, vinegar and spices in a large kettle. Bring to a boil Add zucchini mixture. Lower heat and simmer for 10 minutes. Wipe rims; secure with lids and rings. Process in a boiling water bath for 10 minutes; set jars on a towel to cool. Check for seals. makes 5 jars.
