1/2 c. warm water (110 degrees)
2 packages dry yeast
1 tsp. sugar
1-1/2 c. warm whole milk (110 degrees)
6 tbsp. unsalted butter, melted and cooled
1-1/2 T. honey
2 extra large egg yolks
5-6 c. all purpose flour
1 T. salt
1 egg white, lightly beaten

Directions:
Place warm water, yeast and sugar in an electric mixing bowl with dough hook attachment. Allow to dissolve for 5 minutes. Add milk, butter, and honey and mix on medium speed until blended. Add egg yolks, 3 cups flour and salt. Mix on low for 5 minutes. Add 2 cups flour and raise the speed to medium. Slowly add more flour, just so the dough doesn't stick to the sides of the bowl. Knead on medium speed for about 8 minutes, adding flour as necessary. Dump dough on floured surface and knead by hand for a minute, until the dough is smooth and elastic. Grease a bowl, put the dough in the bowl and then flip the dough over so the top is lightly buttered. Cover the bowl with a damp towel and allow the dough to rise for 1 hour, until it is doubled in volume. Grease two 9x5 inch pans and divide dough in half. Roll each half into a loaf shape and place in prepared pans. Cover pans with damp towel and allow to rise for another hour. Meanwhile preheat oven to 350 degrees. When the dough is ready, brush the tops with egg whites and bake for 40-45 minutes, until they sound hollow when tapped. Turn them over and cool completely on a wire rack before slicing.
