4 mashed ripe bananas
4 eggs
1 c. oil (or to lower fat, do 1/2 c. oil and 1/2 c. applesauce)
3 c. granulated sugar (I actually do a bit less)
1/2 c. milk with a tsp. of vinegar or lemon juice (this is a sub for buttermilk)
2 tsp. vanilla
3 1/2 c. all purpose flour
2 tsp. baking soda
1 tsp. salt

Mix the bananas, eggs, oil, sugar, milk, and vanilla. Beat well at medium speed. In another bowl, mix flour, baking soda and salt with whisk. Add the dry mixture gradually to the wet and mix well at medium speed.
Butter the two loaf pans and coat with granulated sugar. Pour half the batter into each loaf pan. Bake at 325º for about 1 hr and 10 minutes.
