6 c. uncooked oats (not instant)
1 c. toasted wheat germ
2 c. shredded unsweetened coconut
1 c. unbleached white flour
1/2 c. whole wheat flour
1 1/4 c. dark brown sugar
3/4 c. vegetable oil
1/2 c. boiling water
1/2 tsp. salt

Preheat oven to 275º. You will need 2 large (12 x 18 inch) rimmed cookie sheets, un-greased. Mix together oats, wheat germ, coconut and both flours in a large bowl. Mix together sugar, oil, water, and salt in a small bowl. Pour sugar mixture over oat mixture and mix thoroughly until all ingredients are coated. Divide granola mixture between the 2 cookie sheets. Spread in an even layer. Bake for 1 hour or until golden brown. Cool. Crumble granola and place in an airtight container.
