1 lb of ground beef
1 medium onion, chopped
1 cup rice
1 can tomatoes, cut up
1 egg
1/4 cup oil
1/4 cup chopped celery
1/4 cup grated carrots
2 T. parsley
Pepper & salt to taste
2 quarts water
Directions:
Directions:

Bring water to boil, add celery cut in small pieces and parsley & carrots. Let it come to a boil a couple of times. Make meatballs: Mix meat, salt, pepper, egg and roll into meatballs and add them to the water mixture. Boil very well and add the cut up tomatoes and the rice. cook all until meatballs are well done and vegetables are done. This is a special soup that is usually eaten with Sarmale--the cabbage rolls. Romanians add sour cream to the soup when served. Enjoy!!
