1/2 cup butter
1/2 cup sugar
1 lb ripe bananas (about 2 or 3 large)
1/2 tsp salt
1 tsp cinnamon, ground
1 tbsp lemon juice
1 egg, beaten well
1 1/2 cup flour
2 tsp baking powder

Directions:
Directions:
Preheat oven to 350º.
Soften the butter to room temperature and mix it with the sugar in a mixing bowl until light and fluffy.
Mash the bananas and add it to the butter and sugar mixture.
Add salt, lemon juice, cinnamon, and egg.
Sift the flour with the baking soda and slowly add it to the liquid mixture.
Pour the batter into the greased loaf pan, approximately 9 x 5 in.
Bake in oven for 1 hour, or until toothpick inserted into center comes out clean.
Serve with honey as a cake bread or as a dessert woth cream or ice cream.

*****I usually use 3/4 cup sugar because I thoughtthat 1/2 cup is too little and whole is a little too much.*****
