5-6 large or 8-10 medium potatoes
peeled, washed and cut into chunks

Cover with water and 1 large can of cream of mushroom soup. (could use cream of celery if preferred).

add 1/2 cup chopped onion

Cook over low to med heat stirring occasionally.

Add black pepper and parsley to taste.

Soup is done when potatoes are fork tender (approx one hour).

Serve with saltine crackers and cheese.
