1 can salmon
3/4 cup cornmeal
1/4 cup flour
1 egg
corn, peanut, or olive oil, for frying
green bell pepper, finely chopped
onion, finely chopped
hot pepper, finely chopped (optional)
garlic salt, paprika, and black pepper, to taste

Directions:
Directions:
In a bowl, mash salmon with fingers. Mix all ingredients. Make flat croquettes for crispy ones, or thicker croquettes for softer ones. Fry in hot oil so as not to have the oil soak in the croquettes, cooking 4-5 minutes on each side or until golden brown. Drain on paper towels. Sprinkle with hot sauce if taste permits.
