1 egg, beaten
2 Tablespoons mayonnaise
2 tablespoons scallions ; minced
1/4 teaspoon Old Bay seasoning
1/4 teaspoon hot sauce
1 lb. Lump crabmeat
4 teaspoons milk
10 saltine crackers ; finely crushed

1/4 cup mayo
2T diced small pickles or cornichons
! T coarse grain mustard
1T white wine vinegar
Salt & Pepper

Mix eggs, mayo, scallions, Old Bay and hot sauce in small bowl
Lightly break up crabmeat, add milk, toss gently to coat.
Add saltines toss gently to combine.
Add egg mixture to combine.
Using large spoon scoop up a portion of mixture, form into cake and fry
Serve with remoulade sauce
