5 lbs. flour
3 ½ cups sugar
2 teaspoons salt
8 eggs
1 quart milk
2 sticks butter
2 yeast cakes or dry yeast
1 egg for brushing top

Directions:
Directions:
Sift flour, sugar and salt in large pan. Beat 8 eggs in bowl. Set aside. Warm 1 at. Milk and take ¾ cup of the warm milk and dissolve the yeast in it. Set aside. Melt the butter in the warm milk. Make a well in the flour and with a wooden spoon mix in the eggs, milk and yeast mixture, mixing well until all is blended. If too sticky, add a little more flour. Cover and let rise overnight, in a warm place, free from drafts. In the morning, punch it down again and knead it and shape it into round loaves and place in greased pie pans or shape dough for loaf pans. After dough rises again, cut a triangle on top of loaves with pointed knife, brush tops with beaten egg and bake in 325 oven for 40 minutes to 1 hour depending on the size of the loaves. Makes about 5 sweetbreads
