1 cup canned black beans, drained
1 cup chopped tomatoes
1/4 cup diced roasted red peppers
2 tbsp. fresh cilantro, chopped
1 cup canned kernel corn
1/3 cup chopped red onion
1 tbsp. minced jalapeņo pepper
1 large clove garlic, crushed
2 tbsp. lime juice

Directions:
Directions:
Combine all ingredients in a bowl and stir to mix. Can be refrigerated up to 3 days. Excellent with pork and chicken.
