2 cups firm peaches, mangoes, pineapple, papaya, kiwi or apricots or a combination, chopped
1 sweet red pepper, seeded and chopped
1 small Jalapeņo pepper, seeded and minced
1 tbsp. honey
1 tsp. mint
2 tbsp. lime juice
1 small red onion, chopped
3 tbsp. chopped fresh cilantro
1 tbsp. olive oil
salt & pepper

Directions:
Combine all ingredients; stir to mix. Can be refrigerated up to 3 days. Excellent with fish, seafood and chicken.
