1 medium head of cabbage---boiled until leaves are tender ( in Romania the entire head is fermented at least 2 months)
2 1/2 lbs of ground beef & pork mixed
3 bay leaves
2 medium onions
2 T. oil ( Romanians use hog lard)
1 small can of tomatoe paste
1 T. Salt
sprinkle pepper
1 cup uncooked white rice

Mix meat with rice. Add finely chopped onion, pepper, salt and add 1 cup water into the mixture. Mix well. Cut leaves from cabbage that are soft and without the center stem pieces. Drop approximately 1 heaping T. on each leaf. Roll up and pinch in the ends so they stay. Make sure the rolls are tight enough that they will not come undone. Save the rest of the part of the cabbage leaves and chopped up into small pieces. You will need a large kettle and layer the cabbage pieces and the sarmale (cabbage rolls). After the last layer, pour water in to cover, cover with the tomatoe paste and 2 T. of oil. The sarmale are usually layered in a circle.
Let them come to a first boil on medium fire on the stove, then simmer for at least 2 hours; can be up to 4 hours. You may also put them in the oven at 350 degrees for about 30 minutes to make sure they are done.

The Sarmale are fixed on special days and holidays and are very popular. They are served with sour cream on top and also with Momaliga, which is a sotf cornbread. This is one of my favorite Romanian dishes. Enjoy!!

George is my assistant and in charge when I am in the States. I have known him and lived by him and his family for the last 13 years. He began working with me when he was just a little boy; helping the orphans and now he works full time for the ministry and does a fantastic job. I Praise the Lord daily for him!
