5 to 6 large potatoes
1 pt. (2 c.) whipping cream or half and half
salt and pepper
2 tsp. parsley flakes
2 c. shredded cheese

Directions:
Directions:
Preheat oven to 400 degrees and place oven rack in the middle of the oven. Peel and cut potatoes into very thin french fry strips (julienne), and place them in a greased 9x13 casserole dish. Pour all of the cream over the top of the potatoes. Salt and pepper them generously and sprinkle half of the cheese on top. Toss to combine. Sprinkle the remaining cheese over the top. Sprinkle Parsley flakes on top of the cheese. Cover with greased foil, and cut a few small slits in the top of the foil to allow steam to escape. (This will keep your cream from boiling over in your oven).
Bake for 1 hour, 15 minutes, or until potatoes are tender. During the last 15 or 20 minutes of baking lower your rack one more step. This makes the bottom of the potatoes brown and crispy.

If you spray your foil with a little bit of non-stick cooking spray, it won't stick to the melted cheese on top of your dish.
