2 cups fine, dry bread crumbs, divided
2 cups ground cooked ham
1 cup grated Parmesan cheese
4 eggs, slightly beaten
1 small onion, finely chopped
1/4 cup finely chopped fresh parsley
vegetable oil for frying

Directions:
Directions:
Combine 1 1/2 cups bread crumbs with next 5 ingredients, mixing well; shape into 1 inch balls. Roll balls in remaining 1/2 cup bread crumbs. Chill 30 minutes.

Deep fry ham and cheese balls in hot oil (375 degrees) for 2 to 3 minutes or until golden brown. Drain on paper towels. Serve immediately with prepared mustard or sweet and sour sauce. Makes 4 dozen appetizer servings.
