6 medium potatoes (peeled and sliced thin)
1/4 cup diced onion
2 sprigs parsley (substitute with dried parsley flakes)
3 Tbsp. flour
1/4 cup butter
1 1/2 Tsp. salt
1/4 Tsp. pepper
1 1/2 cups milk (2% or homo)
1 to 2 cups grated sharp cheddar cheese

Directions:

Blend onion, parsley, flour, butter, salt, pepper and milk; mix thoroughly. Arrange potatoes slices in a buttered, 2 quart baking dish. Pour mixture over potatoes. Cover and bake @ 350ºF for approximately 50-90 minutes or until potatoes are cooked (tender). Sprinkle cheese on the top of potatoes, uncover and place back in the oven for approximately 10-15 minutes or until cheese is melted. Potatoes can be taken out of the oven and allowed to sit for 10-15 minutes prior to serving. This can be frozen and reheated.
