1 cup milk
1 cup Sugar
2 2/3 cups Flour
½ stick Butter
3 Large Eggs
3-4 Ripe Bananas, mashed
2 tsp Grated orange peel
1 tsp Cinnamon
3 tsp Baking Powder
¼ tsp Baking Soda
1 dash Salt
Walnuts, if desired

Directions:

Preheat the oven to 325 degrees. Butter a 9x5x3 inch loaf pan .

Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.

In a small bowl, mash the bananas with a fork. Mix in milk and cinnamon.

In a third bowl, mix together the dry ingredients.

Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears. Do not over mix.

Pour batter into prepared pan. Top with walnuts if desired.

Bake 1 hour, or until a toothpick inserted in the center comes out clean.

Set aside to cool on a rack for 10-15 minutes. Remove bread from pan and cool completely before serving.
