3 tbsp butter or margarine
3 tbsp all-purpose flour
1-1/2 tsp salt
1/8 tsp white pepper
2 cups milk
1 cup shredded cheddar cheese
5 cups thinly sliced, peeled potatoes (about 6 medium)
1/2 cup chopped onion

Directions:
Directions:
In a large saucepan, melt butter over low heat. Stir in the flour, salt and pepper until smooth. Gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Add potatoes and onion, stir well.

Transfer to a greased baking dish. Cover and bake at 350ºF for 1 hour. Uncover and bake 30-40 minutes longer or until the potatoes are tender.
