2 Tbsp. flour
1 1/2 tsp. salt
1 tsp. dry mustard or caraway seed
1/2 tsp. sugar
1/4 tsp. black pepper
1/4 tsp. ground sage
1 pork loin roast (4-5 lbs.)

Topping:
1 1/2 C. applesauce
1/2 C. brown sugar
1/4 tsp. cinnamon or allspice
1/4 tsp. mace
1/4 tsp. salt

Directions:
Directions:
Mix flour, salt, mustard, sugar, pepper and sage. Rub over surface of meat. Set meat fat side up in a roasting pan. Roast at 325º 1 1/2 hours. For the topping, combine remaining ingredients. Spread over top of meat. Roast about 45 minutes longer, or until done. Serves 8-10.
