3 tbsp salad oil
1 clove garlic, minced (optional)
1 medium sized onion minced
1/4 chopped green pepper
3 c boiled rice
1 tsp salt
2-1/2 c canned tomatoes or tomato juice

Directions:
Directions:
Heat the salad oil in a frying pan. Add the onion, pepper and garlic (if used) and cook 2 to 3 minutes. Add the tomatoes, salt and blend well. Stir in the rice; cover the pan and cook at low temperature until the tomato juice is absorbed (about 15 minutes).
