1 lb diced chicken breast
1 packet chicken taco seasoning
1 can re-fried beans, heated
flour tortillas
vegetable oil
shredded lettuce
diced tomatoes
shredded sharp cheddar cheese
sour cream

Directions:
Directions:
Chicken filling:

Cook diced chicken in 2 tbsp vegetable oil until cooked through; juices should run clear. Add taco seasoning and cook to package instructions.

Taco shells:

Heat vegetable oil (coat bottom of pan generously) over medium to medium high heat. Place a flour tortilla in the oil, and cook until golden brown. Turn tortilla, and cook until the other side is golden brown. Remove from oil and drain on paper towels. Repeat, until you have enough shells for everyone.

Assembly:

Spread heated re-fried beans on taco shell. Add chicken, and top with lettuce, tomatoes, cheese, and sour cream.

I love Cholula hot sauce on mine, but I love spicy food (and I'm tougher than my Uncle James).
